Both made by crushing preserved Nocellara (green) or Kalamata (black) olives to a smooth paste, we add sea salt, Mardouw EVOO, Mardouw Balsamic, fresh garlic, onions to our chutney, and pecan nuts, thyme, sea salt, Mardouw EVOO, fresh garlic, green chilli and lemon zest to our paste.

Olive Chutney

A delicious chutney based on our black olives which makes this premium olive product goes with just about anything! It has a fabulous combination of little sweet, tangy and spicy. Mardouw’s premium Olive Chutney is made with the addition of sea salt, Mardouw’s Extra Virgin Olive oil, Mardouw’s Balsamic Vinegar, fresh garlic and onions.

Green Olive Paste

Olives are something so precious. Together with olive oil they are one of the main ingredients of the Mediterranean diet, and one of the healthiest. Mardouw’s Premium Green Olive paste is made by crushing preserved olives to a smooth paste. This olive paste is made with the addition of sea salt, Mardouw’s Extra Virgin Olive oil, fresh garlic and lemon skin.

Black Olive Paste

How we make table olives

Farming

Fresh mountain water off the Langeberg Mountains, fertile Breede River Valley soil and a Mediterranean climate provide optimum conditions for our 50,000 olive trees to thrive happily.

Harvesting

South Africa's olive harvest season runs from April to June. We use the latest harvesting techniques and equipment, including hand-picking and machine-harvesting, to make sure only the best quality olives make it into our bottles and jars.

Sorting

Leaves and small twigs are removed from the olives before transferring them to the processing plant.

Cleaning

At the processing plant, olives undergo a diligent check and a good wash, while anything other than olives gets removed.

Storage & Maturation

Freshly picked table olives goes straight from tree to storage tank. We store our table olives at Mardouw Olive Estate in a solution of water and salt for up to 12 months.

Packging

After 12 months, we crush our preserved olives to a smooth paste, we add sea salt, Mardouw EVOO, Mardouw Balsamic, fresh garlic, onions to our chutney, and pecan nuts, thyme, sea salt, Mardouw EVOO, fresh garlic, green chilli and lemon zest to our paste. Our olive chutney and pastes are now ready to be shipped to a shop near you.
